Favor Eats: Semi-Homemade Strawberry Layer Cake Recipe
We love a showstopping dessert for any occasion, especially one that’s easy to pull together (and can double as breakfast the next morning).
Our team member Maddie shared her recipe for a strawberry layer cake with a semi-homemade twist…so you can save time by using a boxed mix and take it up a notch with fancy frosting and fruit topping.
We think this would be the perfect dessert to dish up for your valentine, galentines, or just for yourself (because why not?). Read on for Maddie’s recipe!


Ingredients
Cake Batter
- 1 box white cake mix of your choice (follow instructions on box!)
Macerated Strawberries
- 1 ½ cups Sliced Strawberries
- 1 tbsp White Sugar
- 1/2 tsp Vanilla
Whipped Cream
- 2 cups Cold Heavy Cream
- 8 oz Mascarpone (1 container)
- 2/3 cup Powdered Sugar
- 1/2 tsp Vanilla
Instructions
Cake
- Preheat oven to cake mix box instructions + follow recipe directions.
- Spray two 9” cake rounds and set aside.
- Evenly divide batter between both cake pans. Cook according to cake box instructions and allow to the cakes to completely cool before assembly.
- Once the cakes have cooled, level off each cake (if necessary).
- Place the first cake on your serving platter, and distribute your first layer of whipped cream. Then add an even layer of macerated strawberries.
- Carefully place the second cake on top of the first cake, and add the remaining whipped cream. Then place fresh strawberries on top as your final topping.
Macerated Strawberries
- Add sliced strawberries to a bowl and distribute the 1 tbsp white sugar and 1/2 tsp vanilla. Mix and set aside for 20-30 minutes.
Whipped Cream
- In a stand mixer, add (2) cups heavy whipping cream, 2/3 cup powdered sugar, 8 oz Mascarpone, and 1/2 tsp Vanilla to the bowl. Mix until stiff peaks start forming (about 2 minutes). Enjoy!
